At the cult bakery’s third Melbourne outpost, you’ll be able to try three new flavours of its croissants: pina colada, rose and pistachio, and chocolate and hazelnut. Plus, two savoury pastries and, of course, the mega-famous strawberry-watermelon cake.

Wildly popular Sydney bakery Black Star Pastry popped up in Melbourne five years ago and now has permanent outlets in St Kilda and Chadstone. On Saturday April 8 it’ll open its most central location to date, in an iconic CBD laneway.

Housed in the city’s former Money Order Office, the new shopfront on Driver Lane merges the bakery’s signature futuristic aesthetic with the history of the heritage-listed grey stone building.

“The city’s laneways are the heartbeat of the CBD, providing the foundations for a strong art and hospitality culture,” says general manager Danielle Laskovsky. “When searching for our third Melbourne home, we wanted to bring Black Star Pastry to the city’s laneways, the source of Melbourne’s coffee culture, to be present in an iconic location that’s loved by many.”

You’ll walk through the doors to find minimalist white walls, a stainless-steel island and a halo light installation hanging above. Custom display fridges will be stocked with picture-perfect cakes to enjoy in the alcove seating area.

Yes, the mega-famous strawberry-watermelon cake (among other favourites) will be here. But the shop’s Melbourne fans will also be the first to taste three new croissant flavours. There’ll be rose and pistachio dipped in strawberry chocolate and sprinkled with rose petals; chocolate and hazelnut finished with ganache and chocolate stars; and pina colada filled with creamy coconut and topped with sweet pineapple and a cocktail umbrella (talk about attention to detail).

For those with less of a sweet tooth, there’ll also be two new savoury pastries: an umami brioche made with shiitake and champignon mushrooms in a miso bechamel sauce and a black cocoa pastry filled with matcha cream.

And if you’re looking for a more substantial meal to satisfy your hunger, a range of all-day bites such as ham and cheese croissants and Japanese chicken pie will be on hand.
