Belle’s Hot Chicken dishes up hot chicken and natural wines across its Windsor, Fitzroy and Richmond stores.
On Thursday night Belle’s will launch its Limited Release Night, where diners can try one-off dishes from founder Morgan McGlone’s archive of recipes and a special wine selection curated by Belle’s wine director Christian Robertson. PBS’s DJ Manchild will be on the decks.
“We were kicking around in the cellar and … we realised it’s about time we have a party,” says McGlone. “I’ve dusted off my cookbook and we’ve pulled out some of the best wines to bring together some limited specials to really make the evening a one-off event.”
At Thursday night’s launch, McGlone himself will man the pans to unveil some never-before-served specials.
Dishes include a grilled pimento cheese sandwich; a cheesecake McGlone last served as an apprentice; and a fried baloney sandwich – a Belle’s hit dish.
“The fried baloney sandwich is something we've done before and it absolutely flew out the door, so this will be a great occasion to bring it back,” McGlone says.
As for the wine list, McGlone will bring out some special magnums and rare bottles, including one of his favourites – “a 2004 unicorn bottle from France” – a Domaine Ganevat Les Vignes de Mon Pere.
“At Belle’s, we’re all about a really fun environment, and Thursday night down at our Windsor restaurant you can expect a bloody good time.”
Belle’s Hot Chicken’s Limited Release Night starts at 8pm every Thursday at the Windsor location.
