Longstanding Melbourne favourite Belles Hot Chicken launched its first food truck last week. It can be found at Northcote’s Welcome to Thornbury and features classics from the Belle’s menu and its signature heat scale that ranges from Southern (mild) to Really F*ing Hot.

The menu is pretty much unchanged from the offering at the stores; there are wings, tenders and sandwiches all for under $20. But McGlone says the franchise will continue to evolve with collaborations and off-menu specials, too.

McGlone has worked as a chef in Nashville, Tennessee, which he describes as “hugely inspirational”. He plans to double down on his experience when he heads back in May. While there he says he’ll “look at some new products and different chillies for our next spice that's hotter than Really F*ing Hot”, he says.

But his ambitions go further than just a quick research trip.

“I also want to be the first Australian chef to participate in their hot chicken festival,” says McGlone.

McGlone has plenty on his plate at the moment, his New York inspired bistro and cafe Natural History opens today in Melbourne.
