Baker Bleu To Open Its Fourth Melbourne Store – and There’ll Be Soft Serve

Seven months after opening its biggest store yet, sourdough maker Baker Bleu will open one of its smallest, in South Yarra.

The team has taken over the former Baker D Chirico site on Domain Road, just across from the Royal Botanic Gardens’ Southern Lawn. The new store, expected to open in September, will have fresh sandwiches assembled on-site as well as the Caulfield North-baked loaves, cinnamon scrolls and country roll wheels the bakery is known for.

While toasted sandwiches remain exclusive to the Cremorne location, the new outpost will exclusively have soft serve – a first for the brand.

“Whenever I think of that location, I think about really nice weather,” says Mike Russell, who co-founded Baker Bleu with his partner Mia Russell. “You’re not so pressured for time because you’re either going there for The Tan, or you’re going to the park, or you’re just going for a stroll and I think [soft serve] fits in well.”

At opening, there’ll be a honey soft serve made with Backyard Honey topped with sea salt, olive oil and caramelised croissant crumbs. Soft serve is “a great vessel for other things that we do, whether it be a cookie crumb, croissant flakes or a little cracker we’ve done that we want to put in it,” Mike says. “[There are] so many different things that we could shoot off, with products that we have already in our range.”

With the proximity to The Tan in mind, the team decided to make its fourth Melbourne store takeaway only. Shortly after opening, the team plans to also sell the bakery’s popular sourdough pizzas and new curated picnic sets for people to pick up and enjoy at the park.

Baker Bleu is expected to open at 183 Domain Road, South Yarra in September.
