Chefs are teaming up across the city this month. Here are three one-off collabs to book this May.
Makan x Warkop
Sisters Tasia and Gracia Seger of Makan, one of the city’s most exciting Indonesian restaurants, are teaming up with Barry Susanto and Erwin Chandra of Warkop, an Indonesian sandwich and coffee shop with stores in Richmond and the CBD. The collab dinner takes place on Thursday May 9.
The two power duos will cook a “Flavours of Nusantara” dinner, drawing inspiration from the Old Javanese meaning of Nusantara, which translates to “outer islands”.

SIGN UPThe dinner will be hosted at Makan, and diners can expect Australian twists on Indonesian dishes, including a take on asinan Betawi (a pickled fruit and vegetable salad) and a kangaroo tail wonton served in bone broth and finished with herb oil. The dinner is $115 per person. Bookings essential.
Ante x Public Wine Shop
Jemma Whiteman and Matt Young of Sydney restaurant Ante will be at Public Wine Shop for one day only on Sunday May 19. Upstairs at the two-storey venue, Whiteman will prepare a set three-course meal for $90 per person, and downstairs guests will be able to order from a bar menu designed by Whiteman. There’ll be a list of sakes from Young’s Black Market Sake to order from both upstairs and downstairs. Bookings essential for lunch upstairs.
Biji Dining x Toddy Shop
Harry Mangat, of pop-up series Biji Dining, and Mischa Tropp are joining forces for Sunday lunch at Tropp’s Fitzroy restaurant Toddy Shop on Sunday May 19. Rohit Singh from Avani Wines on the Mornington Peninsula will also be pouring a selection of wines from his family vineyard, where Mangat and Tropp have both independently done pop-ups in the past.
Dishes will include fish pathiri (a steamed rice pancake stuffed with fish masala) with coriander chutney and bitter herbs and a chhena jalebi (a sweet snack made with soft acid-set cheese) with kheer (Indian rice pudding) custard and rhubarb. Bookings are essential and the set menu is $65 per person plus drinks.
