Late last year, we sent Paul Wilson, Julian Gerner, Acland St Cantina’s new head chef Dan Hawkins and graphic designer Daanen Nootenboom up to Corona’s La Casa in Byron Bay, where they spent their time on location to develop and create a Mexican feast from local and seasonal ingredients. Selected by Broadsheet, the boys took the opportunity to create and refine dishes now on offer at Acland St Cantina.

A place for creativity and inspiration, La Casa has hosted the likes of David Bromley and Alpine, as well as Kelly Slater and Angus Stone as previous artists in residence. Curated by accomplished filmmaker Taylor Steele, the La Casa artist residencies provide a space for guest artists to garner inspiration and to create, with each artist’s stay being captured on film, tracing their moments of reflection, collaborative brainstorming efforts and the realisation of their ideas.
