Sydney wine bar Poly (sister to award-winning restaurant Ester) is about as famous for its inventive snacks as it is for its experimental, organic and biodynamic wine list. There’s the crispy squares of fried potato with salted egg yolk sauce. A bronzed, cruller-like donut filled with comte. Enoki mushroom carbonara.
Poly chef Mat Lindsay and his team will be joining Melbourne’s Embla crew for a one-of-a-kind supper this Saturday.
While Poly fans might be hoping to see those comte donuts make the journey south, it’s probably better to come without any expectations. The Poly gang will be going rogue – cooking up whatever they fancy on the night and pouring wines in abundance. It’ll be an evening of off-the-rails fun, tunes and experimentation.
While there’ll be small plates to snack on, it’s the wine list that’ll be centre stage. No word on what they’ll be pouring – but with bottles from Embla's enviable cellars, there’s no doubt it’ll be a good time.
