Shannon Bennett’s ethical seafood restaurant gears up for a one-night-only special event.

Iki Jimē is preparing for a challenge this Thursday – a vegan seafood degustation without being all about seaweed, seaweed, seaweed.

Expect serious experimentation in the six-course menu. Dishes will include kohlrabi with sea beans and watercress; kelp and sea grape tartare; and coastal green dumplings, served with seaweed flatbread and a miso and roasted kelp paste.

The kitchen will be pairing different varieties of seaweed with native ingredients – both coastal and those found in the bush. A large portion of the coastal plants will have been foraged by the chefs themselves.

The meal rounds out with wakame and apple in a Jerusalem artichoke broth, followed by a combination of carrots, sea salted caramel and funori. Vegan wines will also be available throughout the evening.
