Hillman was a finalist in the amateur category of the Vin de Champagne Awards, which is one of Australia's most coveted wine awards. Across five pairings she’ll be pouring “grower-produced” champagnes, made using only the grower’s own, often single-vineyard grapes.
Femia has paired a different cheese with each champagne. Expect whipped gorgonzola dolce with fresh Dandenong honeycomb, organic goat’s cheese from Sutton Grange producer Holy Goat, Brillat-Savarin triple-cream brie with white strawberries, and more.
