Theatre of Ideas – Sustainability
The second Theatre of Ideas session at the Melbourne Food and Wine Festival will focus on ideas surrounding sustainability.
Hosted by acclaimed food writer and critic Jill Dupleix, the session will bring together five industry leaders to speak about what both diners and restaurants can do to further the concept of sustainability in the food industry. The discussion will examine the effect sustainability has on our communities, environments and dining tables.
Hear from Peggy Chan, chef and owner of Grassroots Pantry in Hong Kong which is dedicated to sustainably sourced, organic and preservative free plant-based produce; chef Shinobu Namae, owner of Michelin-star restaurant L’Effervescence in Tokyo, where French and Japanese philosophies converge; ZeroFoodprint co-founders Chris Ying and Anthony Myint, (who is also the chef and owner of US restaurant The Perennial); and sustainability advocate Janice Leung Hayes, who is behind the platform Honestly Green, which founded Hong Kong’s first farmers market.
A Q&A and panel discussion will follow each speaker’s five-minute presentation. The event runs from 1.30pm to 3.30pm.
