Lygon Street eatery and wine bar Etta is giving the classic Sunday roast a run for its money with the launch of its Slow-Cooked Sundays series.
Using its "Big Green Egg" (a ceramic Japanese-inspired charcoal grill), owners Hannah Green and Hayden McMillan will cook each week’s hero protein, part of a three-course meal, low and slow.
Slow-roasted lamb neck will be served with a salty, zesty, herby helping of gremolata, and rosemary polenta with pine nuts to kick things off on August 12. Dessert will be pavlova, candied cumquat and grapefruit curd, but Green and McMillian will change the menu weekly.
Local wine will be paired to the set menu. Drop in on the first Sunday and you’ll be treated to a 2017 Valentine Grenache from Heathcote.
There is no scheduled end date for the weekly affair and Etta hopes to collaborate with guest chefs as the series goes on.
Vegetarian and other dietary requirements can be catered for when requested in advance.
