Simon Toohey’s Smokehouse
Smokehouses are traditionally the domain of beef briskets and pork ribs, but Masterchef runner up Simon Toohey is challenging that by cooking up a sustainable, vegetable-based smokehouse dinner.
Expect to chat with your fellow diners at this relaxed, sit-down meal. Along with communal seating and shared dishes, Toohey will be there to explain the food and cooking techniques he's using. And after dinner he’ll mingle with the guests.
Dishes for each night will be different but you might see something like a six-hour smoked pumpkin with sour roast chilli powder and winter spice; corn with fermented chilli, coriander and lime with harissa pesto; or smoked chocolate ganache with Brookies macadamia liqueur, spiced apple and oat kefir syrup.
The Smokehouse itself has been made from recycled and borrowed materials and equipment, and the kitchen has been assembled using recycled materials. Toohey is even using vegetables deemed too imperfect to sell, and he’ll be using the entire vegetable wherever possible – whatever doesn’t get used becomes worm food.
Tickets include a welcome drink, dinner and a dessert cocktail.
