Say goodbye to Melbourne's much-loved (sell-out) vegeterian pop-up dinners and join chef Paolo Arlotta for the last time at Carlton restaurant Henry Sugar.

Italian chef Paolo Arlotta (formerly at Vue de Monde, Tipo 00 and Kinfolk) is known for his pop-up vegetarian degustation series Herbivorous Nights – an intimate affair known to regularly sell out a month in advance. He’s also the founder of now-closed all-day diner Riso at Fitzroy’s Rose Street Market.

Now after 11 years and more than 200 pop-ups, Arlotta is hosting his last Herbivorous Nights before heading off for new ventures overseas.

Send off the much-loved Melbourne vegetarian pop-up with two special (and final) dinners at Carlton restuarant Henry Sugar. Diners can expect a five-course degustation menu featuring seasonal, sustainable and local produce. There'll be three snacks to begin with followed by two shared entrees and bread before moving onto pasta and risotto for mains. To finish, there'll be a pre-dessert and dessert.

You might enjoy season greens and Jerusalem artichokes with XO sauce; borage fusilli with pine mushroom ragu and taleggio and tortelli with chestnuts, shishito and black garlic. On the sweeter side of things, expect coconut black sesame custard with basil ice cream and sweet potato dnouts topped with caramelised white chocolate mousse and bannana caramel.
