Two former staff from Hong Kong’s Michelin-starred Yardbird are slinging XO prawn and kimchi beef cheek pizzas on Freddy's 72-hour-fermented dough.

When Geoff Marett, Caelan O’Rourke and Raphael Hyams brought their modern Japanese pop-up concept Nama to Leonardo's Pizza Palace earlier this year, they were booked out in a flash. Marett and O'Rourke met working at lauded yakitori restaurant Yardbird in Hong Kong before coming home to tour Nama around.

The next pop-up is a one-day-only collab with Windsor pizzeria Freddy's. Nama is taking care of the toppings and generously dropping them on the house dough at Freddy's, which is left to ferment for 72 hours for a crisp crust with a fluffy inside.

There's an XO prawn pizza on offer with garlic oil, Nama's house shichimi (a Japanese spice blend), mozzarella and lemon; a number with enoki mushroom, peanut butter hoisin, silverbeet and bocconcini; kimchi beef cheek pizza with gochujang, Napoli sauce and mozzarella; and a chicken cotoletta sando with anchovy mayo.

The entire Freddy's range will still be on offer throughout the day, alongside takeaway booze. Nama's red hot sauce and shichimi will also be available for purchase.
