When Japanese pop-up concept Nama – by Geoff Marett, Raphael Hyams and Caelan O’Rourke – landed at Leonardo's Pizza Palace last year, it booked out in a flash (O’Rourke has since left the business). The duo has also taken over kitchens at Leonard’s House of Love, Freddy’s, Ocean Beach Pavilion, The Summer Jam and Postal Lane Markets, plus at-home private dining.
The next pop-up is a one-day-only collab with Fin Wines in the Yarra Valley. And this time there’s a lot of bread – or in the words of the Nama team, “fermented vessels that are tasty conduits for all types of deliciousness.”
Expect shio koji-peppered beef deli roll on a toasted milk bun with yellow curry tartar, zucchini pickles and garlic butter; charred shimeji, pickled enoki and takana with aonori mayo on Akimbo sourdough; and a kimchi-gochujang bolognese on focaccia with parmesan cheese.
To drink: fun, fresh, fizzy and bold drops (both wines and ciders) from the Fin Wines crew.
