Learn the art of sustainable cooking with Matt Stone, one of Australia’s most progressive chefs and advocates for low-waste food practices.

Stone, who is the executive chef of Oakridge Estate in Victoria’s Yarra Valley, will run this all-inclusive masterclass and dining experience, sharing his expert knowledge while showing you how to create simple, artistic and delicious dishes with pure, wholefood ingredients.

Groups will be intimate, allowing time for Stone to field questions while enjoying a shared meal. Dishes to be created specially for the class include kangaroo tartare with wattleseed cracker, smoked trout and caviar on a sour cream tart, and lemon and mascarpone parfait.

Stone’s culinary career began at Margaret River’s Leeuwin Estate. At the age of 20 he became sous chef at Perth’s award-winning Star Anise, where his talents were noticed by environmentalist and entrepreneur Joost Bakker who appointed him to lead the kitchen at Greenhouse Perth.

Soon after, Stone relocated to Sydney and then Melbourne, where he embraced the sustainable food movement. The chef is big on the paddock-to-plate ethos, growing ingredients from the Oakridge Estate kitchen garden and experimenting to create new and innovative dishes.
