Martinez is whipping up a spicy Mala broth common in Chinese hotpots, while Mai's soup will have a mild base of pickled mustards with Vietnamese sate, a garlic-rich sauce that uses a range of chillies.

Each hotpot is good for up to four people and costs $40 for the broths, with the option to stick to one or go half-and-half. Extras such as mock meats, rice cakes, vegetables, rice and noodles cost extra.
