The menu at Lankan Tucker is all about proving that Sri Lankan food is more than just rice and curry, with dishes like classic string hoppers and less-familiar biryani-stuffed burritos.

For Broadsheet’s inaugural Dine Out festival, it’s collaborating with Spanish chef Ana Cortes-Garcia of Andalusian Tapas Club for a one-off lunch at its new Carlton location. The affordable set menu blends Spanish and Sri Lankan cuisines in fun, unexpected ways.

Sri Lanka’s popular pan rolls – rolled pancake filled with meat or fish) get an Andalusian spin with smoky braised eggplant. The flavours of biryani and socarrat (the crisp, caramelised edge of paella) combine on toast. Lanka’s coconut sambol meets the seafood of Cádiz’s sherry coast in a dish of wok-fried squid. And traditional Andalusian chicken and olive stew gets a toasted coconut spin.

Berenjena ambul thiyal cigarrillos – crisp filo pastry rolls filled with tamarind adobo eggplant, sofrito, curry leaf ash and turmeric and coconut espuma (foam)

Biryani socarrat cakes
Lankan-spiced socarrat-style sticky rice tostada, vegetable coconut curry, cashew crunch

Arrow squid pol mallung Jerezano – wok-fried arrow squid, tempered coconut and lime sambol, “Agua de la Macarena” glaze

Main/principal
Chicken Cazuela – claypot chicken with burnt coconut gravy, olives and green chilli oil, plus pickled veg, sambal and pappadums

Dessert/Postre
Lanka blanca – lemongrass-makrut lime sorbet, coconut-lime granita, mandarin jelly, candied ginger
