Here’s where to get your next fine-dining green fix: chef and yogi Paolo Arlotta (formerly at Vue de Monde and Tipo00, and ex-head chef at Kinfolk) is hosting more instalments of Herbivorous Nights, a monthly celebration of vegetarian fine dining.
The intimate, Mediterranean-influenced dinners feature seasonal, sustainable, local produce, with a focus on low-waste, healthy dining. The menu changes each month, so every dinner service will offer a different experience.
The May dinner featured six courses, including endive with caramelised buttermilk and shiitake essence; risotto cooked in whey, koji butter and grapefruit; and eggplant tiramisu with cardamom.
This isn’t Arlotta’s first pop-up: he’s done stints at Host, Private Dining Room, and even a secret location, but this is the first venture where he’s pulling all the strings, from the menu to event planning.
There are three seatings available: 6.15pm, 7.30pm and 8.45pm. Tickets are $70 per person; drinks are additional.
The next dinners will be held on June 7, July 5, August 9 and September 7.
