Sosta is welcoming truffle to the menu with weekly specials throughout winter, each using truffles from a different region of Australia.

North Melbourne fine-dining spot Sosta Ristorante presents Eight Regions of Black Truffle in partnership with luxury food supplier, Friend & Burrell. The series sees an exclusive new truffle dish added to the menu each week until August 10, each showcasing a different truffle from an Aussie region.

Here’s what to expect for the next eight weeks:

Week 1 (June 18–22 )

Taglioni pasta with butter and parmesan sauce, garnished with toasted hazelnuts and black truffle shavings from Blackwood Park Truffles, Tasmania.

Week 2 (June 25–29)

Macaroni with parmesan and Wiley Creek truffles from New South Wales.

Week 3 (July 2–6)

Cacio e pepe lasagna sprinkled with Oak Valley Truffles from Western Australia.

Week 4 (9–13 July)

Chicken and ham tortellini in parmesan broth, featuring truffles from Truffiere Archeologico, Kingston, Victoria.

Week 5 (July 16–20)

Stuffed pansotti pasta and walnut sauce topped with black truffles from Clear Range Truffles, New South Wales.

Week 6 (23–27 July)

Spaghetti carbonara crowned with black truffles from Oak Hill Truffles, Gordon Victoria.

Week 7 (July 30–August 3)

Potato and buffalo ricotta gnudi in veal broth finished with black truffles from Turalla Truffles, Bungendore, New South Wales.

Week 8 (August 6–10)

Gnocchi alla Romana flavoured with butter, pecorino and sage, and adorned with black truffles from Nangiyala Truffiere, Creek Junction, Victoria.

Truffle dishes are $45 each week, or $35 on Tuesday and Wednesday. Available for dinner only. Click here to book.
