Dine Out: Herbs Taverne at Apollo Inn
If you haven’t heard of Herbs Taverne, we forgive you. The Hot-Listed Sydney bar only opened in May. It’s another smash-hit from a group that’s made a habit of opening small, laser-focused bars that quickly become the talk of town. The first was Tio’s, a tequila party bar. Then came Cantina OK (mezcal), Bar Planet (Martinis) and Centro 86 (Margaritas). And Herbs? It specialises in Negronis, offering red, green and orange varieties.
For Broadsheet’s inaugural Dine Out festival, the Herbs crew is flying down to Flinders Lane with some of its best digestivos in hand. For one-night-only, they will stir up an array of signature Negronis, served alongside Martinis from Apollo Inn’s Lachlan Bentley. The chefs at Apollo Inn will be cooking from a menu of snacks primed for Negroni and Martini-sipping, and a DJ will keep the vibes high until late. Limited bookings are available until 8pm.
