In December, former Amaru head chef Cam Tay-Yap opened Pebble, a West Melbourne pop-up serving a playful menu inspired by his travels across Southeast and East Asia. The restaurant quickly became a local favourite, but it was always going to be temporary. In May, the team closed up shop and Tay Yap headed overseas on a sabbatical.
Tay-Yap is making his comeback at Dine Out, joining forces with chef Mika Chae at Chae’s inventive CBD Korean restaurant, Doju. The two top chefs are collaborating on hyper-seasonal set menu that showcases Victorian ingredients. Expect is flavours and ideas from Japan, Korea, Indonesia, Vietnam and more, spun into dishes that are both comforting and cheffy.
