Pastry chefs don’t get any more accomplished than John Demetrios. You might best know him as the winner of Dessert Masters, but before that very public prize, he was honing his craft at Stockholm’s Michelin-starred Oaxen Krog, plus Vue de Monde, Omnia and Yugen in Melbourne.
His fastidious, highly technical approach will be on full show during Broadsheet’s second Dine Out festival, when he prepares a five-course meal of nothing but desserts at Armadale wine bar Auterra. Expect considered use of temperature, texture and flavour, with each course designed to play with contrast and perception.
