In a state filled with destination diners, five-year-old Heathcote bistro Chauncy still manages to stand out in a big way. Founders Louis Naepels and Tess Murray met working at Florentino. Him: Florentino’s head chef, who grew up in Paris and worked at Michelin-starred restaurants before moving to Melbourne. Her: the restaurant’s junior sommelier, who went on to become head sommelier at Supernormal. Together they’ve created a serene six-course lunch experience that changes weekly with what Murray grows in her garden and Naepels picks up at Castlemaine Farmers Market.

For Broadsheet’s second Dine Out festival the duo is making the trek to Melbourne for a one-off dinner at highly regarded Brunswick East wine bar Etta – and they’ll be bringing loads of fresh Heathcote produce with them. In the kitchen, Naepels and Etta’s own Lorcán Kan will collaborate on a four-course set menu including dishes like chou farci (cabbage rolls) with Chinese sausage and chestnut, exploring their respective French and Malaysian backgrounds. On the floor, Etta owner Hannah Green (one of the city’s very best front-of-house names) will work several long, room-length communal tables alongside Murray, who’s no slouch on service herself.
