You’ve met the birria taco, a crisp, petite thing made for dipping in consomme. Now meet its hulking Tex-Mex cousin.

They say everything’s bigger in Texas. And for Dine Out 2026, Dingo Ate My Taco is planning to prove it. For the past six years the Tex-Mex food truck has been parking around Melbourne, passing out some of the city’s best birria and other types of tacos.

The team’s new permanent Abbotsford location, in the old Range Brewing site on Johnston Street, is serendipitously opening just in time for the festival. The fit-out is inspired by Marfa, a small desert town in Texas that blends Mexican and American architecture and culture.

To celebrate, the kitchen will be rolling out enormous 40-centimetre flour tortillas and stuffing them with cheese and slow-cooked brisket. Vegetarian and vegan versions will be available too.

From 12pm until sold out, exclusively for Dine Out.
