Cutler & Co. and Josh Niland Collaborate for Providoor
Fancy Fitzroy dining room Cutler & Co. has teamed up with seafood king Josh Niland to offer a fish-focused Providoor box.
Inspired by Niland’s work at venues Saint Peter, Fish Butchery and his just-opened fish’n’chip shop Charcoal Fish in Sydney’s Rose Bay, Cutler & Co. presents a menu influenced by the chef’s new cookbook Take One Fish: The New School of Scale-to-Tail Cooking. Using 15 varieties of fish to show how people can transform even the oddest bits into amazing dishes, Take One Fish is a scale to tail culinary collection for the home cook that includes 60 recipes.
The Cutler & Co. Providoor collaboration centres on Murray Cod, a sustainably sourced and native Australian freshwater icon that is a favourite of Niland’s thanks to its sweet white meat that both grills and travels well.
The $160 at home menu for two includes starters of pissaladière, Yellowfin tuna, 'nduja and Baker Bleu bread and cultured butter. For dinner it’s grilled Murray Cod; Murray Cod roast potatoes; fresh corn polenta; Murray Cod gravy, harissa; and organic leaves with herbs and shallot dressing.
The $270 iteration of the box features the same menu but includes three bottles of hand-selected premium wine: a NV R. H. Coutier ‘Tradition’ Brut, Champagne from France; a 2016 Cauhapé ‘Geyser’ Jurançon sec Petit Manseng blend from South West France designed to accompany the starters; and a 2018 Chalmers ‘Dott’ Pavana from Heathcote, Victoria for the main.
Then there’s a $325 option that includes all the above plus a signed copy of Take One Fish: The New School of Scale-to-Tail Cooking and Eating.
The book and various hand-selected wines can also be purchased as add-ons via Providoor.
The Cutler & Co. Josh Niland Providoor box is available Friday to Sunday across Victoria. Click and collect is available on Friday 1st and Saturday 2nd October from Cutler & Co. (55/57 Gertrude St, Fitzroy) between 11am - 2pm.
