Texakaya By Burn City Pop-Up
Burn City Smokers has dubbed the cuisine “Texakaya”, drawing inspiration from izakayas (informal Japanese pubs) and the smoked barbeque beloved in Texas. It’s collaborated with the Grand Hyatt’s chef de cuisine Amit Chitnis on the new menu, which features fusion ramen toppings like Wagyu beef brisket and crispy pork belly (smoked for 12 and 14 hours respectively in Burn City’s custom-built rig).
There are also options for vegetarians, including jalapeño poppers, a mushroom ramen with smoked king brown and shiitake, and miso cauliflower (smoked for three hours) with house-made kimchi.
For dessert, options include a caramelised pecan pie with Japanese bourbon ice-cream, a tangy lime zest and yuzu curd pie, and taiyaki (the Japanese fish-shaped cake) with a choice of fillings (sweet adzuki bean or custard) and soft serve (black sesame or matcha).
The pop-up runs until August 31. Dinner is served Monday to Sunday (from 6pm to 10.30pm), lunch is served Monday to Friday (from 12pm to 2.30pm).
