
Brunch With Raymond Tan at Axil Coffee Roasters
Are you a brunch person? Raymond Tan, the self-taught baker behind Raya and soon-to-open “Scandinasian” bakery Dua, certainly is. And now you can join him for a special brunch to discover what makes it the best meal of the day.

The brunch takes place at Axil Coffee on Bourke Street, where Tan will serve a spread inspired by his childhood in Malaysia.
The sit-down brunch will centre around his new spin on Malaysian kaya toast: a custard bun made with plant-based milk and served alongside soft-boiled eggs for dipping and swirling.
In a nod to traditional Scandi breakfast, the spread will also include a variety of condiments such as kaya, cheese, jam, cashew butter, as well as pickles and seasonal fresh fruit. Finally, Tan will also be serving up a nine-layer glutinous rice cake with kaya and a flan. With so much to choose from, you’re in for a real choose-your-own-brunch adventure.
The brunch will be paired with brews by Axil Coffee, prepared by two-time Australian Barista Champion Jack Simpson. He’ll also speak about the rise of alternative milks and how to best use them in lattes.
