Melbourne got lucky last year. Top Sydney restaurateurs Ross and Sunny Lusted finally put down restaurant roots in Melbourne. Their twin Melbourne venues Marmelo, a sprawling Portuguese restaurant, and Mr Mills, a moody Spanish basement bar, will take you straight to the Iberian Peninsula. And it’s worth staying a while.

While you’re there, it’s worth heading down the chartreuse staircase to find Mr Mills. Here, the focus shifts from Portugal to Spain through the considered snack menu and cocktails; don’t miss the anchovy oil Martini. Share-friendly dishes include Gildas, mackerel escabeche, and garlic prawn with Espelette peppers on toast.
