Shannon Bennett at The StandardX
After an eight-year break from the pass, celebrated Aussie chef Shannon Bennett is returning to the kitchen for BistroX, a three-month residency at Fitzroy’s The StandardX. Joining him in the kitchen are fellow ex- Vue De Monde chefs Cory Campbell and Ryan Henley, who will work with Bennett to put on a bistro-style menu served at the boutique hotel’s lobby restaurant Bang.
The menu features elevated yet approachable dishes, and everything – from the bread to the pasta – is made from scratch. While dishes will constantly evolve, there’ll always be a weekly-rotating, locally sourced steak. There might also be crayfish and black pudding on flatbread; devilled eggs topped with Yarra Valley trout roe and chive; wild mushroom risotto; Gundagai lamb hot pot with braised shank and salted tongue, baked in puff pastry; and French onion soup.
The wine list is curated by ex-Vue de Monde sommelier Carlos Simoes Santos.
