The We Are Kerala founder and ex-Rochester Hotel chef is cooking up an Indian feast at the Mornington Peninsula winery, taking inspiration from Delhi, Bengal, Goa and – of course – Kerala.

Keralan chef Mischa Tropp is the founder of We Are Kerala, a dining pop-up dedicated to South Indian cuisine, and former chef at Fitzroy’s Rochester Hotel, when it had a distinctly Indian menu. He’s spent the past few lockdowns cooking delicious takeaway – most recently butter chicken sets named after his grandmother Elsie. And for the rest of the year, he’s taking over the kitchen at boutique biodynamic winery Avani, a breezy 90-minute drive from the city, in Red Hill.

It’s a celebration of Indian hospitality and culture – the winery is run by Indian-born winemaker Shashi Singh and her husband Devendra, with the name Avani coming from a Sanskrit word that means “the earth”.

The four-course set menu covers a variety of Indian regions. Expect dishes such as besan chilla (chickpea pancake) with crème fraîche and Yarra Valley trout roe; woodfired prawns with a fragrant malaikari curry; and ada, a Keralan-style fried wheat pastry filled with braised turmeric rabbit. Mishti doi – a traditional Bengali delicacy of fermented yoghurt, mango and finger lime – will be on offer for dessert.

The sessions will take place every Friday to Monday from November 19 until December 30. Bookings essential.
