Mirek Aldridge started out brewing with a 70-litre homebrew set-up and a small hand-cranked Corona grain mill, which is where his new venue, The Mill Brewery, gets its name.
Then Aldridge opened the Mill in late March 2017. Now he has a 600-litre system. The move hasn’t changed his process, though. He still uses his homebrew kit to experiment with small batches before committing to a larger run.
The main beer selection spans the traditional to more experimental styles, from easy-drinking lagers to hoppy IPAs and sours. The standouts include a well-balance mosaic pale ale and popular American pale ale. For non-beer drinkers, there are local wines, classic cocktails and a rotating selection of seltzers on tap. As for food, the birria tacos are a crowd favourite.
The Mill is small, housed in a warehouse space on a quiet road near Smith Street. Long red-gum tables and the bar occupy most of the room. And there’s a lush beer garden out the front with plenty of room for you and your crew. All of the brewing equipment is visible at the back.
