There’s a bit of something for everyone at The Craft & Co. The two-storey warehouse contains a 120-litre distillery, 1000-litre brewery, bar, restaurant and events space.

It’s by Paul Baggio, who’s been running wholesale food and beverage companies since the late ‘90s, supplying equipment, packaging and marketing advice to cheese factories, bakers, breweries, wineries and the like. The Craft & Co brings all his accumulated expertise to bear across its Collingwood and Preston locations.

The central kitchen pumps out modern brewery classics. For mains, expect crowd-pleasing dishes such as a Diavola pizza topped with spicy salami, nduja and scarmoza cheese; a loaded eggplant parmigiana; or slow-roasted lamb shoulder on a bed of polenta. A concise snack menu adds crisp haloumi and salt-and-vinegar calamari to the equation.

This being a distillery and brewery, a gin- or beer-tasting flight is a good idea. The Collingwood Pash cocktail is a mainstay, marrying The Craft’s dry gin with hibiscus syrup, orange and passionfruit.
