Twin brothers Luke and Adrian Cala are new to hospitality, but you wouldn’t know it. Their venue, Laneway Greens, re-imagines the traditional salad bar in a slick, modern setting that speaks of their backgrounds in design and marketing.

It serves salads, smoothies and pressed juices – nutrient-rich food that’s packed with flavour. The six salad options change twice a year. They’re always driven by thoughtful flavour pairings.

Crowd favourites include the miso-glazed salmon with pickled cucumber and ponzu dressing; and sweet potato with coleslaw, tzatziki and puffed amaranth. Be prepared to eat standing up during the lunch rush, or opt for takeaway.

Custom-made Shiko pottery complements the contemporary fit-out by Travis Walton Architecture, with backlit Perspex benchtops and floor-to-ceiling powder-coated screens dividing front-of-house from the kitchen.

An impressive point-of-sale counter encased in solid American Walnut shingles is a hard-to-miss feature piece.
