Taking inspiration from New York’s delis and diners, Leor Haimes and Elliot Koren – the guys behind Bentleigh East’s Time & Place – opened the first Saul’s Sandwiches in Carnegie in 2020. Since then, they’ve opened more locations in Bentleigh East, Hawthorn, Balaclava, and a drive through pop-up in South Melbourne that ran for six months in 2022.

Every Saul’s has a diner-like feel, with red-and-white tiles and a sprawling counter, as well as indoor and outdoor seating. Splashed across the creamy white exterior is “Saul’s” in unmissable bright red cursive.

Around eight sandwiches are available daily. Highlights include a smoked pastrami number with manchego, cavolo-nero slaw, horseradish mayo and kosher pickles; a saucy tuna melt; and a chicken parma with fiore de latte, basil napoli, parmesan and herb ranch.

Breakfast options include an entirely vegan sausage-and-hash muffin, and a cheesy bacon-and-egg roll with barbeque sauce and a hash brown. There are also rotating weekly specials – in the past there’s been a Philly cheesesteak, a vegan meatball sub and a Cubano.

With your sanga of choice, grab an iced coffee made with beans from Clark Street ’s Cheltenham roastery and an ooey-gooey choux-pastry custard puff.
