Pendant lights drip from the ceiling at Regale, a refined 150-seat bistro located in the historic 1800s building that was once the Carlton United Brewery. It’s a new direction for chef Tinee Su, whose CBD bakery Tori’s is known for lines down the block, iced strawberry matcha lattes and delicate Asian-influenced cakes.
Regale is decidedly more polished with lush booth seating, champagne service and a bold menu that brings out Asian flavours in Western dishes. Savoury dishes include grilled butter scallops with saltbush and chicken cordon bleu with a Sichuan-inspired sugo. There’s also a dedicated rice and noodles section, which features black garlic fried rice and mushroom tagliolini.
There are echoes of Tori’s on the dessert menu, where there is an avocado and jasmine tiramisu with a hint of genmaicha. As for the wine list, it travels around Europe and to local vineyards. And you’ll find Asian-inspired cocktails like the Pandan Paradise with coconut and a shot of gin.
