Paul Vernuccio is a Pascoe Vale local. He noticed a distinct lack of cafes and restaurants in the area, and an obvious demand for them. He decided it needed somewhere that would open for breakfast, lunch and dinner. It needed George Jones.

The all-day eatery is named after the area’s first shopkeeper, who traded through the 1840s. The Eon Design interior is spacious and unintimidating, with large wooden booths and a spread of small tables. Relative to its size, there’s not much seating. A soundproofed ceiling ensures it never gets too loud, even when tables are filled with customers. It’s almost the antithesis of the noisy inner-city cafe.

As at Sartoria in Preston, Jason Shiong (ex-Longrain) is largely responsible for the menu. It features baked eggs and eggs Benedict for breakfast; and a braised-lamb ragu penne for lunch.

Dinner bounces from Europe (marinated olives, porterhouse steak), to America (four types of burgers, beef brisket) and Asia (sticky pork and papaya salad), aiming to please almost everyone.

Drinks are best enjoyed kerbside, where there’s plenty more seating. Early on that means a dark roast from Di Bella or a single origin roasted on site. Later, easy-drinking cocktails, beer and middling wines.
