Blynzz Coffee Roasters is the creation of Ben and Lyn Ryder, who opened the roaster and cafe in 2012. They originally sought to start a cafe-meets-deli as an avenue for retailing products from their olive grove, but the coffee side of things soon outgrew their original plans.

Blynzz roasts 100 per cent Arabica beans sourced from Mexico, Peru, Ethiopia, Colombia, Papua New Guinea and beyond. Ben produces about 20 single origins and blends at any given time, with consistency a key focus. Much of this production is wholesaled to other cafes in the region.

The Blynzz cafe usually offers one blend and two single origins to drink at the shop. Ben takes pride in getting to know the nuances of his customers’ palates, so he can match new beans to their preferred tastes when their favourite has come to the end of its season.

The all-day breakfast menu uses local produce for dishes such as scrambled eggs with smoked Harrietville trout and Meredith Dairy feta. Lunch includes hearty options such as Wagyu burger with bacon, tomato relish, lettuce, tomato, mayo and pickles, alongside a healthy grain salad.
