Situated on Brunswick Street, where the lively Gypsy Bar once stood, Hamish Goonetilleke’s The Rum Diary Bar pays equal homage a Cuban holiday, Hunter S. Thompson novel of the same name and the drink responsible for both men’s eye-opening adventures.
You can expect a relaxed atmosphere and knowledgeable service, but most importantly, an ever-growing list of up to 50 international rums, offering a little something for everyone. Enthusiasts will appreciate the top shelf, which props up some discontinued Sailor Jerry, cask-strength Ron Zacapa and old bottles of Laurent Monopole to name a few. House cocktails maintain a classic recipe focus, whereas other inventive items on the menu utilise tropical ingredients tailored to suit the drink’s qualities.
Dark and Stormys are mixed with a rich, concentrated syrup made from fresh ginger, coriander and chilli, whilst espresso martinis are shaken with dark rum and vanilla, featuring coffee extracted from an old-school lever press coffee machine. For something a little more daring, be sure to try a shot of flaming Bacardi 151 served in a hollowed passionfruit half.
For hungry stomachs, house jaffles are available all day, and with inexpensive options including the avocado smash (avocado, mint, pepper and feta),and the Atlantic (smoked salmon, cream cheese, capers, spinach and dill), you can save your dollars for splurging on all the rare rums on offer.
