Rhum Burgundy might be small in size, but its drinks offering goes a mighty long way. Its name reflects management’s focus on sharp cocktails (rhum is the French spelling of rum) as well as wines. Local vignerons and imports make the cellar appealing to both visitors and local winemakers alike.
Gun drinks maker Billy Phillips (ex-Morries) is on shaking and stirring duties and rum, unsurprisingly, is a strong focus. That means means Daiquiris and Mojitos feel pretty much essential. A playful gin, white chocolate liqueur and limoncello number or the elegant pineapple sage White Negroni Sour are inventive and intriguing. Asking for your favourite classic garners good results too, with the likes of an Amaretto Sour, Moscow Mule or Julep getting equal attention from energetic bartenders.
