Stillwater is one of Launceston’s top restaurants. It’s been operating since 2000, inside an 1830s flour mill on the edge of the Tamar River. The location grants relaxing views of fishing boats and forms a charming backdrop for your meal.

Just as the restaurant’s clean, rustic fit-out doesn’t overpower the old mill’s original charms, the uncomplicated a la carte menu gives locally sourced produce room to shine.

Start with the Cape Grim beef tartare with slow-cooked yolk; and southern fried Tasmanian quail with roasted sweet corn and buttermilk. Larger plates include seared wallaby topside with romesco, sprouted chickpeas and roasted pepper sauce; and Flinders Island lamb rack with mint sauce and chermoula roasted eggplant. Moulting Bay oysters are available all year round.

There’s also a five-course degustation with matching Tasmanian wines from Stillwater’s on-site bluestone cellar.

Return in the morning for coffee and breakfast. Hearty options include eggs Benedict, served with Mount Gnomon Farm ham, hollandaise and lovage; and rye waffles with local Huon salmon, dill and crème fraiche.
