Kristy Booth-Lark, founder and owner of Killara Distillery, has unrivalled heritage in Tasmanian distilling. She first learnt the trade from her parents, Lyn and Bill Lark, two of the pioneering figures in Tasmania’s whisky boom.
She started at Lark Distillery aged 17, eventually becoming head distiller and general manager of the business. Later, she left Lark and struck out on her own, founding Killara in 2016, Australia’s first female-owned and operated distillery.
The Killara Distillery is located just outside the historic town of Richmond, 20 minutes north of Hobart. At Killara’s homey and minimalist distillery cellar door, decorated with old Tasmanian whiskies and distilling equipment, you get to fully experience Booth-Lark’s skill and talent.
The latest bottlings of the highly sought-after and richly flavoured Killara Single Malt Whisky are on pour. Killara’s Bush Liqueur and Apothecary gin range are also available to taste, the latter comprising sloe gin, navy strength and barrel-aged expressions.
Book ahead for the guided distillery tour experience or pop in for a taste of what has quickly become a must-visit destination for Tasmanian whisky enthusiasts.
