Tucked into a tiny alcove on Lonsdale Stret, White Chaco is a pocket-sized diner that punches above its weight. The 20-seat space brings together Taiwanese, Japanese and Chinese flavours.
That might mean salmon tartare with smoked shiitake, pickles, bonito, shiso mayo and truffle oil served with dorayaki (Japanese red bean pancakes). Or ramen, including dan dan pork (with the option of handmade noodles), roasted garlic pork, Wagyu beef masa and a vegetarian truffle option.
There are also three different takes on popcorn chicken, including a plum and citrus version, featuring a plum and fermented mandarin soy coating and fried shiso. Plus, soupy dumplings and rice bowls topped with smoked eel or braised pork belly along with lava eggs and house-made pickles.
