+81 Aizome Bar is a refined cocktail bar channelling the precision, craftsmanship and charm of compact drinking dens found in Ginza and Shinjuku, Japan.
Inside, there are just ten seats and one bartender. Liberal use of Aizome (indigo blue) tones, natural wood, leather, and delicate details sourced from small Japanese artisans curate a moody late-night atmosphere.
Still, the star of the show are the “neo cocktails”: wine-like drinks made via a five-day process that involves freezing botanicals at -20 degrees. Try a Kiwi Sparkling Sake, Tomato Rosé and Banana Sherry.
A Japanese-inspired snack menu complements drinks. There's satsuma-age (fried fishcake) topped with bonito cream and pickled kohlrabi; and prawn shinjo-age (fritters) with prawn head emulsion and yuzu kosho.
