Find yourself anywhere in Sydney (and in a number of places in Melbourne) at any time of day, and chances are you’ll spot a couple of people walking about with that telltale green-and-orange cup piled high with creamy gelato.

This is the ice-cream specialist’s 16th Australian store. Inside, counters are piled high with glistening, colourful gelato. Customers can see the icy treat being churned and Messina’s signature cakes being constructed. Off to one side there’s a dedicated classroom for gelato classes and Messina dining experiences.

The full range of 40 flavours (including staples such as apple pie; pistachio; coffee; white chocolate and macadamia; salted mango coconut; and strawberries and cream) and five specials is offered here. The specials change throughout the week, so every day a new flavour goes into the cabinet; Messina has a rotating back catalogue of 4000 flavours, and it produces new ones every week.

The chain patiently makes its own yoghurt (a 24-hour process), bakes its own brownies and roasts its own hazelnuts. Artificial colouring and preservatives have no friends here.

The 200-square-metre space has a distinctly retro vibe, mostly thanks to the mid-century-styled timber shelving up one wall. Retro vases, intriguing statues and a star clock from Dansk Vintage complete the vibe.
