The quiet storefront of Couverture and Co has enjoyed a few incarnations, once as a home wares store, and once as a butcher.

Now, it sits as a shrine to the glorious cocoa bean, and what it can be in the hands of a passionate maker. Jessica Brookes is the owner behind Couverture and Co, single-handedly producing all of the store’s constantly evolving chocolates.

And that’s no easy task: on any given day, the weather in Brisbane can range from unbearably hot to witheringly humid, and full-on subtropical storm. With the calm and steady hand of an artisan, Jess has to manage these fluctuations while working with this very sensitive medium.

Lucky for the Red Hill community, she succeeds. In fact, there are so many favourites that Brookes says she can hardly take any item off the menu without someone immediately noticing.

On any given day, the cabinet might hold flavours like tonka bean, mulled wine, orange and poppyseed, or passionfruit, all just waiting to be ceremoniously selected, wrapped and taken home.
