Lyndon Kubis and Renton Carlyle-Taylor’s series of hybrid wine bars and bottle shops made wine connoisseurs out of a whole new generation of drinkers in Melbourne (see: Toorak Cellars, The Alps, Milton Wine Shop).

This is their first venue in Brisbane. It opened in 2017, underneath FV, a gleaming Tim Gurner development (the pair has worked with him in Melbourne, too). The space offers coffee and pastries in the morning before the extensive wine list takes over. It’s inspired by the caves à manger (wine shops that double as either restaurants or cafes) of Paris.

Wine lines the walls of the venue, right up to the ceiling. The team has a passion for natural wines. This is evident in the extensive selection of Australian and imported products, including Queensland producers La Petit Mort and Konpira Maru Wine Company.

The design is dark and moody, offset by crisp white bar spaces and parquetry flooring. The furniture is custom made by Melbourne’s iamnotmason; round tables and stools rendered in cypruss pine and raw steel.

There are standard bar snacks of charcuterie, cheese, pate and jerky. A full food menu is expected soon.
