Trash Taco – by Jacob Knauth (also of Lucky Egg) – is inside Fortitude Valley bar Barbara. With a small cast-iron contact grill in the corner he’s making an alternative to the OTT Tex-Mex that can sometimes dominate locally.

Lamb shoulder quesadillas are on the menu – along with lamb shoulder tacos, slow-cooked beef tacos and pork tacos; barramundi or refried bean tostadas; and snacks and shares such as spicy drowned pork rolls and corn chip chilaquiles (like nachos but saucier, the menu says) with salsa rojia, pepitas, onion and coriander.

Trash Taco keeps it very simple. Knauth is using fresh ingredients to tap into barbacoa (slow-cooked) and al pastor (spit-grilled) styles of cooking. For example the beef, is seasoned with espresso and peanut butter.

Barbara pours tap beers, mezcals, natural and small-producer wines, and an extensive cocktail list that includes Tommy’s Margaritas and $10 Negronis. Happy hour “tipples and nibbles” specials feature a bunch of drinks and snacks priced between $5 and $7 from 5pm to 7pm.
