Years ago, childhood friends Michael Nham and Hao Vu decided to stick a burger on the menu of NSHRY, their popular beachside cafe in Melbourne’s Albert Park. Soon after, Nham’s umami burger creation was winning accolades and became a crowd favourite. People demanded more burgers from the pair, so they obliged. Now, there are six on the menu.
“Everyone says, ‘That’s that burger joint,’ and we’re like, ‘No, it’s a lunch place,’” laughs Nham’s cousin Viet Nguyen, who’s heavily involved in the creative side of the businesses. “We thought, let’s just do a burger joint and the opportunity opened up here.”
Nham and Vu also own two Banoi restaurants and a bunch of food trucks, all based in Melbourne. The pair’s decision to expand to Brisbane was largely based on the King Street site in Bowen Hills, which is just large enough for them to stick in Super Combo as well as their third Banoi. Banoi Brisbane is expected to open in three to four weeks.
“We really love this site,” says Nham. “We thought it was a good pairing: Banoi and Super Combo.”
The beef patties at Super Combo are a mixture of Angus brisket and Wagyu fat, with no added ingredients. The patties are seasoned on the grill and paired with a custom-made brioche bun. You can try the award-winning umami original, disguised as the “Hadoken” burger. It features beef patty with umami rub, smoky mushroom sauce, gruyere cheese, caramelised onion, roasted tomato and parmesan crisp. Otherwise, there are numerous beef burgers, a chicken number and a vegetarian option.
The drinks list includes a range of shakes, a couple of beers, a cider, soft drinks and juices.
The space has been designed by Technē Architecture + Interior Design, which is also responsible for Melbourne’s Jimmy Grants, Fonda and MoVida. The colourful interior is highlighted by 3D-printed figurines that protrude from the roof ( each one took 13 hours to make). A Super Nintendo console is set up for customers to play Street Fighter while they wait for their order.
Super Combo and Banoi are two of many bars and eateries to open in the new King Street development, just a short stroll away from the Brisbane Showgrounds.
