Brisbane’s French favourite Montrachet is finally opening its long awaited boulangerie this Saturday.
Montrachet co-owner and chef Shannon Kellam has been searching for a space to open a bakery for well over a year now. Moving his celebrated Paddington restaurant to the new King Street precinct has given him the opportunity.
Kellam seconded third-generation Lyonnaise baker Patrick Delbar to Brisbane to pass on his skills to long-time Montrachet chef Tara Bain, who will head up the new venue.
Kellam and Bain will be importing butter from Belgium, flour from the acclaimed Grands Moulins de Paris Muille in Paris, and sourcing chocolate from Michel Cluizel, a Normandy-based chocolatier dating back to 1948.
From 6.30am Saturday morning you can expect freshly-baked baguettes, hand-made croissants, sourdough loaves and eclairs to line the new Montrachet Boulangerie countertop. You know what to do.
